Vegetable omelete Image

Ingredients:

  • 2 eggs
  • 1/4 cup of bell peppers, chopped, any color
  • one-fourth cup of chopped tomatoes
  • one-fourth cup of finely chopped onions
  • 1/4 cup of finely chopped spinach
  • To taste, add salt and pepper.
  • 1 tablespoon of olive oil

Instructions:

  1. Beat the eggs thoroughly in a bowl.
  2. To taste, add salt and pepper for seasoning.
  3. In a nonstick skillet, warm the olive oil over medium heat.
  4. When the veggies are starting to soften, add the diced bell peppers, tomatoes, onions, and chopped spinach to the skillet and sauté for two to three minutes.
  5. Shake the skillet to ensure that the beaten eggs are distributed evenly over the sautéed vegetables.
  6. The omelette should be cooked for two to three minutes, or until the bottom is set and the edges begin to brown.
  7. Using a spatula, carefully flip the omelette, and continue cooking for another two to three minutes, or until the eggs are cooked through.
  8. After transferring the veggie omelette to a platter and, if preferred, folding it in half, serve it hot.
