Vegetable omlete
Ingredients:
- 2 eggs
- 1/4 cup of bell peppers, chopped, any color
- one-fourth cup of chopped tomatoes
- one-fourth cup of finely chopped onions
- 1/4 cup of finely chopped spinach
- To taste, add salt and pepper.
- 1 tablespoon of olive oil
Instructions:
- Beat the eggs thoroughly in a bowl.
- To taste, add salt and pepper for seasoning.
- In a nonstick skillet, warm the olive oil over medium heat.
- When the veggies are starting to soften, add the diced bell peppers, tomatoes, onions, and chopped spinach to the skillet and sauté for two to three minutes.
- Shake the skillet to ensure that the beaten eggs are distributed evenly over the sautéed vegetables.
- The omelette should be cooked for two to three minutes, or until the bottom is set and the edges begin to brown.
- Using a spatula, carefully flip the omelette, and continue cooking for another two to three minutes, or until the eggs are cooked through.
- After transferring the veggie omelette to a platter and, if preferred, folding it in half, serve it hot.
